Recently feeling under the weather and in need of something to sooth my aching bones, sore body and runny nose, my friend Trudy Austin introduced me to a remedy that she has been sipping on the past month that has turned her life around. This post is all about healing the body from a simple recipe of Potassium Broth, minerals found in and under the skins of root vegetables right under our runny noses.

The Recipe
- 8 cups water
- peelings from 2 good sized potatoes and 2 carrots, organic if possible (Cook up the veg separately and it makes a nice mashed potato and carrot side dish to a meal.) - 1 cup of dried mushrooms - 2 celery stocks chopped - 1 onion chopped into big chunks, discard ends but include the outer skin - 1 bunch of Italian parsley - 1 tsp turmeric - 1 tsp black pepper - chunks of chopped ginger, maybe a tbsp size Toss all ingredients into a pot with the water and bring to a boil then simmer for 2 to 3 hours. When finished, remove the veg chunks, press through strainer or cheese cloth and remove as much liquid from them as possible. The remaining broth can be stored in the fridge for a couple of days or longer in the freezer.
When ready to be consumed you can choose to add salt to taste or even a little miso paste.
A cup in the morning and before bed helps to prepare your body for the day of activity or resting. This is a wonderful addition for new mothers, as so much of their body's minerals have been shared with their baby(s) for such a long period of time. Good to have as a supplement for skin health and if you are on a cleanse to reintroduce minerals balance for the body. Great also to help sleep and restless leg syndrome if taken before bed.
